A homecooked meal on a Tuesday night, made to perfection
with everything but the kitchen sink,
lasted until the weekend–my soul is satisfied.

1. Monday Night’s Dinner was incredibly delicious and was as follows: kale with onions, cherry tomatoes, yellow peppers, and various seasonings, an open-faced baked potato with dairy-free cheese (one thing I hate about the dairy-free cheese is that it takes FOREVER to melt) & butter, salt & pepper, and a mouthwatering steak.

I was so happy to have leftovers of this meal, and if I were completely okay with it, I’d slap myself for how good it was!

I stuck my whole foot in this meal (if you or your relatives are from the South, you’ll know what this saying means)! And I am happy it turned out the way it did–super YUMMY!


2. Maxine 4th of July Funny Quote . . . because, why not?! I love this character and her sassiness and quick-witted retorts! I thought it would be cool to share a funny quote for today and Maxine is a great go-to for this!

Thursday Night’s Dinner

For dinner, I made fried colossal shrimp and a side salad on Thursday night. For the shrimp, I used the same wet batter as I did for my fried chicken: dairy-free milk, one egg, and various seasonings. Cornmeal (yellow) is what I used to coat/dredge them in instead of flour.

The salad is spinach, cucumbers, strawberries, blueberries, cherry tomatoes, onions, and Feta cheese. The dressing, applied later, was Ranch.

I had an extra tartar sauce from my seafood dinner from last weekend and I most certainly used it, along with some ketchup as dipping sauces for the shrimp.

It was truly a tasty delight!

For Friday night, I had the remaining shrimp, roasted red potatoes, and cucumbers with onions, strawberries, Feta cheese, and Ranch dressing.

1. Tuesday Night Dinner was a delectable treat. I hadn’t cooked fried chicken in an extremely long time.

I made a decent wet batter (two eggs, lactose-free milk, olive oil, and various spices). I used yellow cornmeal instead of flour and fried them in vegetable oil.

My Jasmine rice was simple: water, olive oil, and salt. The sweet corn was as well: white & yellow corn, salt, pepper, lactose-free milk, water, and light brown sugar.

I had leftovers for Wednesday, and it was even more delicious at that time!


2. Oscar De La Hoya Quote: I used to be a huge fan of this incomparable former boxer. His personality was always top-notch during interviews and he let his fists do the talking in the boxing ring all the time.

I don’t recall him ever being a massive trash-talker. He held his own. He may not have blown through all of his matches, but the guy was a LEGIT warrior in the ring.

And he was/is handsome, too.

The quote above struck me as instantly motivational. Judging from those few words, he didn’t allow anyone to limit what he could do. And well . . . isn’t that how we all should be?

A Short Break

Hello, beautiful people. I have decided I need to take a short break away from WordPress. It’s long overdue.

I will be back at it next Tuesday, March 26, 2024, with the next “A Tuesday Snapshot” photo prompt. I hope tomorrow and the upcoming weekend and Monday will be kind to you all.

For now, I’ll leave you with a few images of a dish I cooked last night: coconut curry shrimp (jumbo) with red & green peppers, Roma tomatoes, fresh garlic, onions, spinach, and Jasmine rice.
